Ubiquitous: The Chip That Changed the World
Martin Gray
Over the last forty years, The Ubiquitous Chip has played a central role not only in the culinary history of Glasgow but also in the revitalisation of the city’s West End and the establishment of Glasgow as an international arts capital. To celebrate its anniversary, Martin Gray tells the story of the Chip and its inspirational founder, Ronnie Clydesdale, who revolutionised the restaurant scene in Glasgow and made the Chip one of Scotland’s best known restaurants. In addition to interviews with countless artists, writers, musicians and others who have formed part of the Chip’s large and devoted clientele over the years, Martin Gray also looks at the changing face of food fashion over four decades by featuring recipes from the Chip’s menu. Illustrated extensively with new and archive photography, this unique book – part social history, cultural history and cookery book – is a magnificent tribute to a much-loved restaurant.
